How to Make Almond Milk

Almond milk is a great alternative to dairy milk and a healthy component for any smoothie or shake. Almonds are gluten-free, low in carbs, and promote a good cholesterol balance.

1. Soak the almonds in water overnight. Do this for at least 8 hours, up to about 12 hours. The soaking softens them well for use, but is optional. Drain the water from the almonds.

2. Blend the almonds in 4 cups of fresh spring or filtered water. Add the vanilla extract and continue blending until well mixed.

3. Sweeten to taste if desired. If you want to sweeten the almond milk, add agave syrup, rice syrup, honey or other reasonably healthy sweetener, to taste.

4. Strain. This is very important or you will be drinking almond pulp as well as the milk. Using something like a very fine strainer or sieve, or several layers of cheesecloth (muslin), pour the almond milk through the filter into a large bowl underneath. The filter will retain the almond pulp and the liquid will go through.

* Squeeze the remaining pulp to remove the last of the liquid. It is easier if done using a cloth; otherwise, use your very clean hands.
* The almond meal left over can be dried and used to add more fiber to your diet.

5. Store. Almond milk can be kept in the refrigerator for 4-7 days, covered. It will usually need shaking before serving, to remix the liquid.

6. Use. Almond milk can be used with a range of foods where you would use dairy milk, such as for cooking, for cereals, for drinking, etc. Those who love almond milk often find drinking it is best.

How to Chill a Drink Quickly

Have you ever forgotten to stock your refrigerator with your favorite soda or beer? All you are left with is that room temperature beverage. Fortunately, it is possible to chill canned and bottled drinks in a matter of minutes with this easy method, and without diluting the drink itself with ice.

1. Measure the temperature of the drink. This step is optional; once you open a can, this method won't be as effective. If this is your first time trying it, though, it will be interesting to record how drastically the temperature can change.

2. Fill a bowl (the thicker and/or more insulated the better) with water and add ice to it. Add as much ice to the water as you can, but not so much that it prevents the entire beverage container from being submerged into the water. A 50/50 mix of ice and water is a good rule of thumb.

3. Add table salt to the ice. A small handful should do. Adding salt lowers the freezing temperature of the water. That means that the water can get colder than the normal freezing temperature (32F, 0C) without turning into ice and causing your soda to litterally explode.

4. Place your drinks in the ice water solution and rapidly stir them all around. By stirring, you're using forced convection to speed the transfer of heat out of your drink and into the ice water solution.

5. Wait two minutes. Measure the temperature of one of the drinks - the temperature should have fallen dramatically in a very short time. If it needs more time chilling, stir the remaining drinks in the salted ice water for another minute or two.

6. Enjoy your cold drink. It should now be about the perfect temperature to quench your thirst.

How to Serve a Bagel Breakfast

A bagel breakfast is delicious, easy to prepare, and enjoyed by all. Many like to share this treat for a Sunday morning, but you can have one any day of the week.

1. Get the best bagels available in your town. Heat them whole in the oven at about 350 degrees Fahrenheit or 175 degrees Celsius, for about twelve minutes, a bit longer if you like them a little on the crispy side. Later you will slice these as you take them out of the oven, and then will place them in a bowl on the table.

2. Make a nice plate of sliced tomatoes

3. Slice some onions, white or red, and some peppers if you like. Lay these on a plate on your table.

4. Put some standard or flavored cream cheese on the table. Provide a knife or a spatula so that you and your guests will be able to spread this all the way to the edge of the bagel.

5. Put about a pound of lox on a plate. Provide a fork, so that guests will be able to separate the top layer.

6. Make sure everyone gets a nice slice of lox to put on top of each bagel, half which they have spread with cream cheese. Guests can then apply their choice of onions, peppers, capers and tomato slices.

7. Suggest to your guests that they eat their bagels as open-faced sandwiches or regular sandwiches, whichever they prefer.

8. Add other items to your table, such as sliced bananas, some coffee, orange juice, small bowls of berries or other fruits. You can also make a little tuna fish salad, as some guests will prefer this over the traditional lox. Enjoy!

How to Grill Meat

Grilling meat can differ depending on the type of grill that you are using. This explanation is only for those using a gas grill to cook steak.

1. Turn on your grill or your gas cooker on (either turn on the gas and ignite, or put coals in the bottom and light).

2. While you are waiting for your grill to heat up, take your pieces of meat and tenderize it using a tenderizing hammer.

3. Season your meat using any type of seasoning that suits your taste. A popular way to do it is: Pat the meat dry, season it with salt and pepper, and rub a light coat of olive oil on it. Note: If you drench the meat in oil, you will cause flare-ups, which will cause the meat to unnecessarily burn and carbonize - imparting a very unpleasant flavor - ash. So, keep the coat of oil light.

4. Lay the meat down on the grill and do not move it until grill lines/brown caramelization (specifically called the "maillard reaction") occurs on the entire surface.

5. Turn the meat over using a spatula. Try not to use a fork at this punctures the meat and results in loss of juice.

6. Remove the meat when it's almost done to your liking. A steak will cook a little after you remove it from the grill or oven, so stop broiling when the steak tests slightly less done than desired.

* Use a meat thermometer and insert it into the thickest part of the steak. Thermometer readings should be: 120°F to 125°F for rare; 130°F to 135°F. for medium rare and 140°F to 145°F for medium. Or...
* Press the meat with your finger. Rare meat will be soft and wobbly, medium will have a springy firmness and well done will feel very firm and unyielding.
